Ingredients

  • 1 pound ground pork
  • 1/4 cup diced red onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup diced watermelon
  • 1 head butter lettuce, leaves separated

Directions

  1. In a large skillet over medium-high heat, cook the pork until browned and cooked through, about 8 minutes.
  2. Add the onion, bell pepper, hoisin sauce, soy sauce, sesame oil, garlic, ginger, black pepper, and red pepper flakes. Cook until the vegetables are softened, about 5 minutes.
  3. Stir in the diced watermelon and cook for an additional minute.
  4. To assemble the wraps, spoon 1-2 tablespoons of the pork mixture onto a lettuce leaf. Roll up the leaf and enjoy!
