Ingredients

  • 1 pound medium-sized shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon fresh garlic, minced
  • 1 teaspoon chipotle powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup freshly-squeezed orange juice
  • 1/4 cup chopped fresh cilantro

Directions

  1. In a medium bowl, combine the shrimp, olive oil, garlic, chipotle powder, paprika, cumin, salt, black pepper, and red pepper flakes (if using). Mix until the shrimp are evenly coated.
  2. Heat a large skillet over medium-high heat. Add the shrimp and cook for 3-4 minutes, stirring occasionally, until the shrimp are cooked through.
  3. Add the orange juice and cilantro and cook for an additional 2-3 minutes, stirring frequently, until the sauce has reduced and thickened.
  4. Serve immediately with rice, quinoa, or a side salad.
