Ingredients
- 1 pound medium-sized shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 tablespoon fresh garlic, minced
- 1 teaspoon chipotle powder
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup freshly-squeezed orange juice
- 1/4 cup chopped fresh cilantro
Directions
- In a medium bowl, combine the shrimp, olive oil, garlic, chipotle powder, paprika, cumin, salt, black pepper, and red pepper flakes (if using). Mix until the shrimp are evenly coated.
- Heat a large skillet over medium-high heat. Add the shrimp and cook for 3-4 minutes, stirring occasionally, until the shrimp are cooked through.
- Add the orange juice and cilantro and cook for an additional 2-3 minutes, stirring frequently, until the sauce has reduced and thickened.
- Serve immediately with rice, quinoa, or a side salad.
