Ingredients

  • 1 pound chicken breasts, cut into strips
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 1/4 cup lime juice
  • 1/4 cup cilantro leaves, chopped
  • 8 Flour or corn tortillas

Directions

  1. In a large bowl, combine chicken strips, olive oil, chili powder, cumin, garlic powder, paprika, and salt. Mix to coat chicken in the spices.
  2. In a large skillet over medium-high heat, cook chicken for 5-7 minutes, stirring occasionally, until the chicken is cooked through.
  3. Add bell peppers and onion to the skillet. Cook for an additional 5 minutes, stirring occasionally, until vegetables are softened.
  4. Stir in the lime juice and cilantro. Cook for an additional 2 minutes.
  5. Serve chicken and vegetables in warm tortillas.
