Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 3 cups vegetable or chicken broth
  • 1 pound potatoes, peeled and cubed
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Directions

  1. Melt the butter in a large pot over medium heat.
  2. Sauté the onion and garlic in the butter until the onion is softened, about 5 minutes.
  3. Stir in the flour and cook for 1 minute.
  4. Slowly pour in the broth, stirring constantly, until the mixture is smooth.
  5. Add the potatoes, thyme, oregano, and pepper. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  6. Stir in the cheese and cook until melted and the soup is thickened, about 5 minutes.
  7. Serve hot.
