Ingredients

  • 2 salmon fillets
  • 3 eggs
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees F.
  2. Place salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper. Bake for 15 minutes.
  3. Meanwhile, bring a pot of water to a boil. Add eggs and cook for 8 minutes. Remove from heat, cool in cold water, and peel.

  6. To assemble the salad, layer the spinach mixture, salmon, and avocado in a serving bowl. Drizzle with remaining dressing.
