Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine cream cheese, 1/2 cup sugar, and vanilla. Beat until smooth.
- Add eggs one at a time, beating well after each addition.
- Pour into graham cracker crust.
- Bake at 350 degrees F (175 degrees C) for 25 minutes.
- Meanwhile, in a medium saucepan, combine strawberries, blueberries, 1/4 cup sugar, cornstarch, and cold water. Cook and stir over medium heat until thickened.
- Cool slightly, then spoon over cheesecake.
- Refrigerate until chilled.
