Ingredients
1 lb. pork shoulder, cubed
1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced
1 jalapeno pepper, diced
2 cups black beans, cooked
1 14.5 oz. can diced tomatoes
1 cup chicken broth
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon chili powder
Salt and pepper, to taste
Directions
In a large saucepan, heat a tablespoon of oil over medium-high heat.
Add the pork cubes and cook until lightly browned, about 5 minutes.
Add the onion, garlic, bell pepper, and jalapeno pepper and cook for another 5 minutes.
Stir in the black beans, diced tomatoes, chicken broth, cumin, oregano, and chili powder. Bring to a boil, reduce heat, and simmer for 15-20 minutes.
Season with salt and pepper to taste.
Serve with a side of rice or bread.
