Ingredients
- 1 lb. pork shoulder, cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeno pepper, diced
- 2 cups black beans, cooked
- 1 14.5 oz. can diced tomatoes
- 1 cup chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon chili powder
- Salt and pepper, to taste
Directions
- In a large saucepan, heat a tablespoon of oil over medium-high heat.
- Add the pork cubes and cook until lightly browned, about 5 minutes.
- Add the onion, garlic, bell pepper, and jalapeno pepper and cook for another 5 minutes.
- Stir in the black beans, diced tomatoes, chicken broth, cumin, oregano, and chili powder. Bring to a boil, reduce heat, and simmer for 15-20 minutes.
- Season with salt and pepper to taste.
- Serve with a side of rice or bread.
