Ingredients

  • 1 lb. pork shoulder, cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeno pepper, diced
  • 2 cups black beans, cooked
  • 1 14.5 oz. can diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • Salt and pepper, to taste

Directions

  1. In a large saucepan, heat a tablespoon of oil over medium-high heat.
  2. Add the pork cubes and cook until lightly browned, about 5 minutes.
  3. Add the onion, garlic, bell pepper, and jalapeno pepper and cook for another 5 minutes.
  4. Stir in the black beans, diced tomatoes, chicken broth, cumin, oregano, and chili powder. Bring to a boil, reduce heat, and simmer for 15-20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve with a side of rice or bread.
