Homemade Pulled Pork Ragu in an Instant Pot

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless pork shoulder, cut into cubes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 (14-ounce) can diced tomatoes
  • 1 cup low-sodium chicken broth

Directions

  1. Set the Instant Pot to the saute setting. Add the olive oil, onion, and garlic. Cook for 3-4 minutes, until the onions are starting to soften.
  2. Add the pork, salt, pepper, oregano and basil. Saute for another 3-4 minutes, stirring occasionally.
  3. Add the diced tomatoes and chicken broth. Stir to combine. Place the lid on the Instant Pot and set to sealing.
  4. Set the Instant Pot to manual high pressure for 15 minutes. When the cooking is complete, allow for a 10 minute natural release.
  5. Carefully open the lid and stir the pork. Use a spoon or fork to shred the pork. Taste and adjust seasonings, if desired.
  6. Serve over pasta or on a sandwich.
