Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound boneless pork shoulder, cut into cubes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 (14-ounce) can diced tomatoes
- 1 cup low-sodium chicken broth
Directions
- Set the Instant Pot to the saute setting. Add the olive oil, onion, and garlic. Cook for 3-4 minutes, until the onions are starting to soften.
- Add the pork, salt, pepper, oregano and basil. Saute for another 3-4 minutes, stirring occasionally.
- Add the diced tomatoes and chicken broth. Stir to combine. Place the lid on the Instant Pot and set to sealing.
- Set the Instant Pot to manual high pressure for 15 minutes. When the cooking is complete, allow for a 10 minute natural release.
- Carefully open the lid and stir the pork. Use a spoon or fork to shred the pork. Taste and adjust seasonings, if desired.
- Serve over pasta or on a sandwich.
