1 can (15 ounces) black-eyed peas, rinsed and drained
1/2 cup vegetable broth
1/4 cup chopped fresh cilantro
Directions
Heat the oil in a large skillet over medium-high heat. Add the onion and sauté for 5 minutes, until softened. Add the garlic, cumin, paprika, chipotle chili powder, and salt and sauté for 1 minute.
Add the black-eyed peas and vegetable broth and stir to combine. Bring to a boil, then reduce the heat to low and simmer for 15 minutes, stirring occasionally.
Remove from heat and stir in the cilantro. Serve hot.
