Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3/4 cup vegetable oil
  • 4 eggs
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Directions

  1. Preheat the oven to 350°F and grease and flour a 9x13-inch baking pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cayenne pepper, and salt.
  3. In a separate bowl, beat together the brown sugar, granulated sugar, and vegetable oil until well combined.
