Ingredients
- 1 can black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/2 cup rolled oats
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegan mayonnaise
- 4 hamburger buns
- Lettuce, tomatoes, and other toppings (optional)
Directions
- In a large bowl, mash the black beans with a fork.
- Add the corn, rolled oats, onion, bell pepper, garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Stir to combine.
- Form the mixture into four patties and place them on a parchment-lined baking sheet.
- Bake at 375°F for 15 minutes, flipping the burgers halfway through.
- Spread a dollop of vegan mayonnaise on the bottom of each hamburger bun. Place the burgers on top, then top with lettuce, tomatoes, and any other desired toppings.
