Ingredients

  • 1 can black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/2 cup rolled oats
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegan mayonnaise
  • 4 hamburger buns
  • Lettuce, tomatoes, and other toppings (optional)

Directions

  1. In a large bowl, mash the black beans with a fork.
  2. Add the corn, rolled oats, onion, bell pepper, garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Stir to combine.
  3. Form the mixture into four patties and place them on a parchment-lined baking sheet.
  4. Bake at 375°F for 15 minutes, flipping the burgers halfway through.
  5. Spread a dollop of vegan mayonnaise on the bottom of each hamburger bun. Place the burgers on top, then top with lettuce, tomatoes, and any other desired toppings.
  6. Serve and enjoy!
