Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb chourico, cubed
- ¼ cup olive oil
- 3 cloves garlic, minced
- 1 teaspoon cayenne pepper
- ½ teaspoon salt
- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- 4 large bell peppers, cut into large chunks
- 1 large onion, cut into large chunks
Directions
- Preheat oven to 375 degrees F.
- In a large bowl, combine the shrimp, chourico, olive oil, garlic, cayenne pepper, salt, honey, and balsamic vinegar. Mix until everything is evenly coated.
- On a large baking sheet, arrange the bell pepper and onion chunks in an even layer. Top with the shrimp and chourico mixture.
- Bake in the preheated oven for 20-25 minutes, or until the shrimp are cooked through and the vegetables are tender.
- Serve hot.
