Ingredients
2 cups cooked edamame
1 cup shredded carrots
1/2 cup chopped red bell pepper
1/4 cup chopped red onion
2 tablespoons white wine vinegar

Directions
In a large bowl, combine the edamame, carrots, red bell pepper and red onion.
In a small bowl, whisk together the white wine vinegar, olive oil, garlic, honey, cilantro, salt and pepper.
Pour the vinaigrette over the salad and toss to combine.
Serve the salad immediately or store in the refrigerator for up to 3 days.
