Ingredients
- 2 cups cooked edamame
- 1 cup shredded carrots
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped red onion
- 2 tablespoons white wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 2 teaspoons honey
- 1 teaspoon chopped fresh cilantro
- Salt and pepper, to taste
Directions
- In a large bowl, combine the edamame, carrots, red bell pepper and red onion.
- In a small bowl, whisk together the white wine vinegar, olive oil, garlic, honey, cilantro, salt and pepper.
- Pour the vinaigrette over the salad and toss to combine.
- Serve the salad immediately or store in the refrigerator for up to 3 days.
