In a large bowl, combine potatoes, butter, cream, Parmesan cheese, roasted garlic, parsley, salt and pepper. Mix until all ingredients are evenly combined.
Spray a 9x13 inch baking dish with non-stick cooking spray.
Pour potato mixture into the baking dish and spread out evenly.
Bake in preheated oven for 30-35 minutes, or until potatoes are tender and golden brown on top.
Remove from oven and serve hot.
