Ingredients
2 tablespoons vegetable oil
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
1/2 cup apricot jam
1/4 teaspoon red pepper flakes

Directions
Heat the oil in a large skillet over medium-high heat.
Add the chicken cubes and cook until lightly browned, about 5 minutes.
Stir in the apricot jam, red pepper flakes, black pepper, garlic powder, and ground ginger. Cook for 2 minutes.
Add the soy sauce and water and cook for 3 minutes, stirring occasionally.
Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
Serve over rice or noodles.

This dish is a great way to use up any leftover apricot jam you may have.
Red pepper flakes can be adjusted to your desired level of spiciness.
