Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup apricot jam
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1/4 cup soy sauce
  • 1/4 cup water

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
  3. Stir in the apricot jam, red pepper flakes, black pepper, garlic powder, and ground ginger. Cook for 2 minutes.
  4. Add the soy sauce and water and cook for 3 minutes, stirring occasionally.
  5. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
  6. Serve over rice or noodles.
