Ingredients
- 2 tablespoons butter
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped bell pepper
- 1 teaspoon minced garlic
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 pound crawfish tail meat
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon paprika
Directions
- Melt butter in a large saucepan over medium heat.
- Add onion, celery, and bell pepper and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute.
- Stir in flour and cook for 1 minute.
- Stir in chicken broth and bring to a boil.
- Reduce heat to low and simmer, stirring occasionally, for 10 minutes.
- Stir in crawfish, cayenne pepper, black pepper, thyme, oregano, basil, and paprika.
- Simmer, stirring occasionally, for 20 minutes.
- Serve over cooked rice.
