Ingredients
2 tablespoons butter
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped bell pepper

Directions
Melt butter in a large saucepan over medium heat.
Add onion, celery, and bell pepper and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute.
Stir in flour and cook for 1 minute.
Stir in chicken broth and bring to a boil.
Reduce heat to low and simmer, stirring occasionally, for 10 minutes.
Stir in crawfish, cayenne pepper, black pepper, thyme, oregano, basil, and paprika.
Simmer, stirring occasionally, for 20 minutes.
Serve over cooked rice.
