Ingredients
- 2 racks of baby back ribs
- 1 cup strawberries, diced
- 2 jalapeno peppers, seeds and ribs removed, minced
- 1/4 cup brown sugar
- 2 tablespoons paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup apple cider vinegar
- 1/4 cup honey
Directions
- Preheat your smoker to 225°F (107°C).
- In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, chili powder, salt, and black pepper to make the rub.
- Rub the mixture all over the racks of ribs, massaging it into the meat.
- Place the ribs in the smoker and smoke for 2 hours, maintaining a temperature of 225°F (107°C).
- While the ribs are smoking, make the glaze. In a small saucepan, combine the diced strawberries, minced jalapenos, apple cider vinegar, and honey.
- Simmer the mixture over medium heat for 10-15 minutes, until the strawberries are soft and the flavors have melded together.
- After smoking for 2 hours, brush the glaze over the ribs, making sure to coat them evenly.
- Continue to smoke the ribs for an additional 1-2 hours, until the meat is tender and the glaze has caramelized.
- Remove the ribs from the smoker and let them rest for 10 minutes before slicing and serving.
- Serve the ribs with any remaining glaze on the side for dipping.
