Ingredients

  • 2 racks of baby back ribs
  • 1 cup strawberries, diced
  • 2 jalapeno peppers, seeds and ribs removed, minced
  • 1/4 cup brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey

Directions

  1. Preheat your smoker to 225°F (107°C).
  2. In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, chili powder, salt, and black pepper to make the rub.
  3. Rub the mixture all over the racks of ribs, massaging it into the meat.
  4. Place the ribs in the smoker and smoke for 2 hours, maintaining a temperature of 225°F (107°C).
  5. While the ribs are smoking, make the glaze. In a small saucepan, combine the diced strawberries, minced jalapenos, apple cider vinegar, and honey.
  6. Simmer the mixture over medium heat for 10-15 minutes, until the strawberries are soft and the flavors have melded together.
  7. After smoking for 2 hours, brush the glaze over the ribs, making sure to coat them evenly.
  8. Continue to smoke the ribs for an additional 1-2 hours, until the meat is tender and the glaze has caramelized.
  9. Remove the ribs from the smoker and let them rest for 10 minutes before slicing and serving.
  10. Serve the ribs with any remaining glaze on the side for dipping.
