Ingredients
- 4 cups bell peppers, diced
- 1 cup jalapeno peppers, seeded and chopped
- 6 cups granulated sugar
- 1 1/2 cups apple cider vinegar
- 2 pouches liquid pectin
- Green food coloring (optional)
Directions
- In a large pot, combine the bell peppers, jalapeno peppers, sugar, and apple cider vinegar. Bring to a boil over medium heat, stirring constantly.
- Once the mixture reaches a rolling boil, continue to cook for 10 minutes, stirring occasionally.
- Remove the pot from heat and let it sit for 5 minutes.
- Stir in the liquid pectin and a few drops of green food coloring, if desired. Mix well.
- Pour the jelly into sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims clean and seal with sterilized lids.
- Process the jars in a water bath canner for 10 minutes. Remove from the canner and let them cool completely.
- Check the seals on the jars after they have cooled. If any lids did not seal properly, refrigerate those jars and use them within 2 weeks.
- Store the sealed jars in a cool, dark place for up to one year.
- Serve the pepper jelly as a spread on crackers or use it as a glaze for meats.
