Ingredients

  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 jalapeno pepper, seeded and chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 corn tortillas
  • 4 eggs
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro for garnish

Directions

  1. Heat vegetable oil in a large skillet over medium heat. Add chopped onion and garlic and sauté until softened.
