These Mexicana Veggie Burgers are a delicious and healthy alternative to traditional beef burgers. Packed with spices, black beans, corn, and peppers, these burgers are full of flavor and perfect for a meatless meal option.
Ingredients
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 red bell pepper, diced
- 1/2 yellow bell pepper, diced
- 1/4 cup diced red onion
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/4 cup cilantro, chopped
- 1/4 cup salsa
- 4 burger buns
Directions
- In a large mixing bowl, mash the black beans with a fork or potato masher.
- Add the corn, diced bell peppers, red onion, garlic, breadcrumbs, cumin, chili powder, paprika, salt, pepper, and cilantro to the bowl. Mix well to combine.
- Form the mixture into 4 patties and place on a baking sheet lined with parchment paper. Refrigerate for at least 15 minutes to allow the burgers to firm up.
- Preheat a grill or a non-stick skillet over medium-high heat. Cook the burgers for about 4-5 minutes per side, or until golden brown and heated through.
- To assemble the burgers, spread salsa on the bottom bun, place the cooked veggie burger on top, and top with additional salsa if desired. Serve with your favorite toppings and enjoy!
