Ingredients

  • 1 tablespoon soy sauce

  • 1 block firm tofu, cubed
  • 2 green onions, sliced

Directions

  1. Heat a large pot over medium heat and add the pork belly slices. Cook until browned and crispy, then remove from pot and set aside.
  2. In the same pot, add the onion and garlic. Cook until onion is translucent and garlic is fragrant.
  3. Add the chopped kimchi, gochujang, gochugaru, soy sauce, and sesame oil to the pot. Stir well to combine.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low and let simmer for 15-20 minutes to allow the flavors to meld together.
  5. Add the crispy pork belly back into the pot, along with the cubed tofu. Simmer for an additional 5 minutes.
  6. Season with salt and pepper to taste.
