Directions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat.
  2. Add the chicken thighs to the pot and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the andouille sausage and cook until it turns brown. Remove from the pot and set aside.
  4. Add the onion, bell pepper, celery, and garlic to the pot. Cook until the vegetables are softened and fragrant.
  5. Return the chicken and sausage to the pot. Add the diced tomatoes, chicken broth, Cajun seasoning, thyme, paprika, and cayenne pepper. Stir well to combine.
  6. Bring the mixture to a simmer and let it cook for about 20 minutes, or until the flavors meld together.
  7. Add the shrimp to the pot and cook until they turn pink and are cooked through.
  8. Stir in the cooked rice and season with salt and black pepper to taste. Cook for an additional 5 minutes to heat the rice through.
