Ingredients
- 1 pound boneless chicken thighs, cut into bite-sized pieces
- 1/2 pound andouille sausage, sliced
- 1/2 pound shrimp, peeled and deveined
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup chicken broth
- 2 cups cooked rice
- 2 tablespoons vegetable oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and black pepper to taste
- Chopped green onions, for garnish
Directions
- In a large pot or Dutch oven, heat the vegetable oil over medium heat.
- Add the chicken thighs to the pot and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the andouille sausage and cook until it turns brown. Remove from the pot and set aside.
- Add the onion, bell pepper, celery, and garlic to the pot. Cook until the vegetables are softened and fragrant.
- Return the chicken and sausage to the pot. Add the diced tomatoes, chicken broth, Cajun seasoning, thyme, paprika, and cayenne pepper. Stir well to combine.
- Bring the mixture to a simmer and let it cook for about 20 minutes, or until the flavors meld together.
- Add the shrimp to the pot and cook until they turn pink and are cooked through.
- Stir in the cooked rice and season with salt and black pepper to taste. Cook for an additional 5 minutes to heat the rice through.
