Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked white rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 celery stalk, diced
  • 1 green bell pepper, diced
  • 1 can diced tomatoes, drained
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced

Directions

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Cut off the tops of the bell peppers and remove the seeds and membranes. Place the hollowed peppers in a baking dish and set aside.
  3. Step 3: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  4. Step 4: Add the diced onion, garlic, celery, and green bell pepper to the skillet. Sauté until the vegetables are softened.
  5. Step 5: Stir in the cooked rice, diced tomatoes, Cajun seasoning, paprika, cayenne pepper (if desired), salt, and black pepper. Cook for a few minutes to allow the flavors to blend.
  6. Step 6: Spoon the mixture into the hollowed bell peppers, filling them generously. Top each pepper with shredded cheddar cheese.
  7. Step 7: Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and continue baking for an additional 10 minutes to melt the cheese and lightly brown the tops of the peppers.
  8. Step 8: Remove from the oven and let the stuffed peppers cool slightly before serving. Garnish with sliced green onions and enjoy!
