Ingredients

  • 1 whole snapper, cleaned and scaled
  • 2 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon ground allspice
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying
  • 1 lime, sliced
  • 1 scotch bonnet pepper, sliced

Directions

  1. In a small bowl, combine the flour, paprika, garlic powder, onion powder, dried thyme, allspice, cayenne pepper, salt, and black pepper. Mix well to create the spice rub.
  2. Rub the spice mixture all over the snapper, making sure to coat it evenly. Allow the snapper to marinate for at least 30 minutes to let the flavors penetrate.
  3. In a large skillet, heat enough oil to cover the fish over medium-high heat. Test the heat by dropping a small piece of bread into the oil. If it sizzles and turns golden brown, the oil is ready.
  4. Carefully place the snapper into the hot oil, ensuring it is completely submerged. Fry for about 6-8 minutes on each side, or until the fish is golden and crispy. Use a slotted spoon or tongs to carefully remove the fish from the oil and transfer it to a paper towel-lined plate to drain excess oil.
  5. Serve the fried snapper with lime slices and scotch bonnet pepper on the side for an extra citrusy and spicy kick. Enjoy!
