  • 12 lasagna noodles
  • 2 bunches of fresh asparagus
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  3. Trim the woody ends of the asparagus spears and cut them into 1-inch pieces.
  4. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Add the asparagus pieces to the skillet and cook for 3-4 minutes until tender-crisp. Season with salt, pepper, dried basil, and dried oregano.
  6. In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, and a pinch of salt and pepper.
  7. Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish. Place 3 lasagna noodles on top.
  8. Spread 1/3 of the ricotta mixture over the noodles, followed by 1/3 of the asparagus mixture. Repeat the layers twice more.
  9. Top the lasagna with the remaining marinara sauce and shredded mozzarella cheese.
  10. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
