Ingredients
- 3 pounds beef roast
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cups beef broth
- 2 pounds potatoes, peeled and quartered
- 1/2 cup milk
- 4 tablespoons butter
- Salt and pepper, to taste
- 1 pound fresh green beans, trimmed
- 2 tablespoons butter
- 1/4 cup breadcrumbs
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter, cubed
- 3/4 cup milk
Directions
- Preheat the oven to 350°F (175°C).
- In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.
- Season the beef roast with minced garlic, salt, black pepper, dried thyme, and dried rosemary. Rub the seasonings into the meat.
- Place the roast in the pot and sear on all sides until browned.
- Pour the beef broth over the roast, cover the pot with a lid, and transfer to the preheated oven.
- Cook for 2 hours, or until the beef is tender and easily shredded with a fork.
- While the beef is cooking, prepare the mashed potatoes. Place the peeled and quartered potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15 minutes.
- Drain the cooked potatoes and return them to the pot. Add the milk, butter, salt, and pepper. Mash the potatoes until smooth and creamy.
- In a separate pot, bring water to a boil and blanch the fresh green beans for 3 minutes. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the breadcrumbs and toast until golden brown. Remove from heat.
- To make the biscuits, preheat the oven to 450°F (230°C). In a large bowl, combine the all-purpose flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your hands, until the mixture resembles coarse crumbs.
- Slowly add the milk while stirring with a fork. Mix until the dough comes together.
- Turn the dough out onto a floured surface and knead lightly. Roll out the dough to 1/2 inch thickness.
- Using a biscuit cutter or a glass, cut out biscuits and place them on a baking sheet.
- Bake the biscuits in the preheated oven for 10-12 minutes, or until golden brown.
- Once the beef roast is done, remove it from the pot and shred it using two forks.
- Serve the shredded beef, mashed potatoes, green beans, and biscuits together for a delicious New Year's Day dinner.
