Ingredients

  • 3 pounds beef roast
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups beef broth
  • 2 pounds potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper, to taste
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons butter
  • 1/4 cup breadcrumbs
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 3/4 cup milk

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.
  3. Season the beef roast with minced garlic, salt, black pepper, dried thyme, and dried rosemary. Rub the seasonings into the meat.
  4. Place the roast in the pot and sear on all sides until browned.
  5. Pour the beef broth over the roast, cover the pot with a lid, and transfer to the preheated oven.
  6. Cook for 2 hours, or until the beef is tender and easily shredded with a fork.
  7. While the beef is cooking, prepare the mashed potatoes. Place the peeled and quartered potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15 minutes.
  8. Drain the cooked potatoes and return them to the pot. Add the milk, butter, salt, and pepper. Mash the potatoes until smooth and creamy.
  9. In a separate pot, bring water to a boil and blanch the fresh green beans for 3 minutes. Drain and set aside.
  10. In a large skillet, melt the butter over medium heat. Add the breadcrumbs and toast until golden brown. Remove from heat.
  11. To make the biscuits, preheat the oven to 450°F (230°C). In a large bowl, combine the all-purpose flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your hands, until the mixture resembles coarse crumbs.
  12. Slowly add the milk while stirring with a fork. Mix until the dough comes together.
  13. Turn the dough out onto a floured surface and knead lightly. Roll out the dough to 1/2 inch thickness.
  14. Using a biscuit cutter or a glass, cut out biscuits and place them on a baking sheet.
  15. Bake the biscuits in the preheated oven for 10-12 minutes, or until golden brown.
  16. Once the beef roast is done, remove it from the pot and shred it using two forks.
  17. Serve the shredded beef, mashed potatoes, green beans, and biscuits together for a delicious New Year's Day dinner.
