Ingredients

  • 1 pound dried red beans
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 6 cups chicken broth
  • 4 cups cooked rice
  • Green onions, sliced (for garnish)

Directions

  1. In a large pot, soak the red beans in water overnight. Drain and rinse the beans before cooking.
  2. In the same pot, heat a tablespoon of oil over medium heat. Add the sausage and cook until browned. Remove the sausage from the pot and set aside.
  3. In the same pot, add the onion, celery, and bell pepper. Cook until the vegetables are softened, about 5 minutes. Add the garlic and cook for an additional minute.
  4. Add the bay leaves, thyme, oregano, paprika, cayenne pepper, black pepper, and salt to the pot. Stir to combine.
  5. Return the sausage to the pot and add the drained red beans. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 1-2 hours or until the beans are tender.
  6. Remove the bay leaves from the pot. Using a potato masher or the back of a spoon, mash some of the beans against the side of the pot to thicken the soup.
  7. Serve the soup hot over cooked rice. Garnish with sliced green onions.
