- 1 medium head of cabbage, thinly sliced
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (14.5 oz) tomato sauce
- 2 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional for spicy kick)
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh cilantro, chopped (for garnish)
Directions
- Heat the vegetable oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 5 minutes.
- Add the sliced cabbage to the pot and cook for another 5 minutes, stirring occasionally.
