Ingredients

  • 1 whole chicken, cut into parts
  • 1 onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cloves of garlic, minced
  • 2 sprigs of fresh thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 8 cups of chicken broth
  • 1 cup of egg noodles
  • 1/4 cup of fresh parsley, chopped

Directions

  1. In a large pot, heat some oil over medium heat. Add the chicken parts and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the onions, carrots, and celery. Cook until the vegetables are softened, about 5 minutes. Add the garlic, thyme, bay leaves, salt, and pepper. Stir to combine.
  3. Return the chicken to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat to low. Simmer for about 30 minutes, or until the chicken is cooked through and tender.
  4. Remove the chicken from the pot and transfer it to a cutting board. Let it cool slightly, then shred the meat using two forks. Discard the bones and return the shredded chicken to the pot.
  5. Bring the soup back to a boil and add the egg noodles. Cook for about 8 minutes, or until the noodles are al dente.
  6. Stir in the fresh parsley and season with additional salt and pepper if needed. Remove the pot from the heat.
