Ingredients

  • 2 cans of young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable broth
  • 8 small tortillas
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup chopped cilantro
  • 1 avocado, sliced
  • Lime wedges, for serving

Directions

  1. In a large pan, heat the olive oil over medium heat.
  2. Add the onion, garlic, and jalapeno pepper, and cook until softened.
  3. Add the jackfruit and cook until it starts to brown.
  4. Add the chili powder, cumin, paprika, oregano, salt, and black pepper. Stir well to coat the jackfruit with the spices.
  5. Pour in the vegetable broth, reduce the heat to low, cover the pan, and let the jackfruit simmer for 10 minutes.
  6. Using a fork, shred the jackfruit to resemble pulled pork.
  7. Heat the tortillas on a dry skillet or in the microwave.
  8. Assemble the tacos by filling each tortilla with the shredded jackfruit, diced tomatoes, red onion, cilantro, and sliced avocado.
