Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup graham cracker crumbs

Directions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a microwave-safe bowl, melt the butter. Add the sugar and stir until well combined.
  3. In a separate bowl, whisk together the eggs and vanilla extract. Add this mixture to the butter and sugar, stirring until smooth.
  4. Sift the flour, cocoa powder, and salt into the wet ingredients. Mix until just combined.
  5. Pour the brownie batter into the prepared baking dish and smooth the top with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Remove the brownies from the oven and sprinkle the mini marshmallows evenly over the top.
  8. Turn on the broiler and place the brownies back in the oven. Broil for 1-2 minutes, or until the marshmallows are golden brown and toasted.
  9. Remove from the oven and let the brownies cool in the baking dish for 10-15 minutes.
  10. Sprinkle the graham cracker crumbs over the marshmallow layer while the brownies are still slightly warm.
  11. Allow the brownies to cool completely before cutting into squares and serving.
