  • 2 pounds fresh spinach

  • 1 cup cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 4 large eggs, beaten

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Wash the spinach thoroughly and remove any tough stems.
  3. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, and cook until softened, about 5 minutes.
  4. Add the spinach in batches to the skillet and cook until wilted, about 5 minutes. Remove from heat and let it cool.
  5. In a mixing bowl, combine cottage cheese, Parmesan cheese, mozzarella cheese, dried oregano, salt, black pepper, nutmeg, and beaten eggs.
