Laotian Grilled Chicken, also known as Ping Gai, is a popular dish in Laos. This recipe offers an authentic way of preparing this flavorful dish with a perfect blend of spices and herbs. The chicken is marinated in a sauce made with soy sauce, fish sauce, garlic, lemongrass, and ginger, which adds a unique tangy taste. Grilled to perfection, the chicken gets a smoky and charred flavor while remaining juicy and tender. This Laotian Grilled Chicken is a must-try for anyone who loves Asian cuisine.

Ingredients

  • 2 lbs chicken thighs
  • 3 tablespoons soy sauce
  • 3 tablespoons fish sauce
  • 4 cloves garlic, minced
  • 2 stalks lemongrass, finely chopped
  • 1 inch ginger, grated
  • 2 tablespoons vegetable oil
  • 1 tablespoon honey
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving

Directions

  1. In a bowl, mix together soy sauce, fish sauce, minced garlic, lemongrass, grated ginger, vegetable oil, honey, ground black pepper, salt, and chopped cilantro.
  2. Add the chicken thighs to the marinade and coat them well. Let the chicken marinate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard any excess marinade.
  5. Place the chicken thighs on the grill and cook for about 8-10 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
  6. Remove the chicken from the grill and let it rest for 5 minutes.
  7. Serve the Laotian Grilled Chicken hot with lime wedges for squeezing over the chicken. Enjoy!
