Ingredients
- 3 eggs
- 1 tablespoon of oil
- 1 teaspoon of cumin seeds
- 1 teaspoon of mustard seeds
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of ground turmeric

- 1 cup of coconut milk
- Salt and pepper to taste
Directions
- Heat the oil in a large skillet over medium-high heat.
- Add the cumin and mustard seeds and allow them to sizzle for a few seconds.
- Add the onion and garlic and cook for about 5 minutes, until the onion is softened.
- Add the turmeric, coriander, cumin, garam masala, and chili powder and stir to combine.
- Add the eggs and stir to combine.
- Pour in the coconut milk and bring to a boil.
- Reduce the heat to low and simmer for 10 minutes.
- Season with salt and pepper, to taste.
- Serve warm.
