Ingredients

  • 3 eggs
  • 1 tablespoon of oil
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of mustard seeds
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground cumin
  • 1 teaspoon of garam masala
  • 1 teaspoon of chili powder
  • 1 cup of coconut milk
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the cumin and mustard seeds and allow them to sizzle for a few seconds.
  3. Add the onion and garlic and cook for about 5 minutes, until the onion is softened.
  4. Add the turmeric, coriander, cumin, garam masala, and chili powder and stir to combine.
  5. Add the eggs and stir to combine.
  6. Pour in the coconut milk and bring to a boil.
  7. Reduce the heat to low and simmer for 10 minutes.
  8. Season with salt and pepper, to taste.
  9. Serve warm.
