Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup buffalo sauce
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Directions

  1. Place chicken breasts in the bottom of a slow cooker.
  2. Add diced onion, garlic, black beans, kidney beans, diced tomatoes, buffalo sauce, chicken broth, cumin, chili powder, salt, and pepper.
  3. Stir to combine ingredients.
  4. Cover and cook on low for 4 hours, or until chicken is cooked through and easily shreds with a fork.
  5. Remove chicken from slow cooker and shred using two forks.
  6. Return shredded chicken to the slow cooker and stir to combine.
