- 1 tablespoon olive oil
- 1 onion, diced
- 2 stalks celery, diced
- 2 carrots, diced
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 4 cups chicken broth
- 2 cups cooked chicken, shredded or diced
- 1/2 cup all-purpose flour
- 1/2 cup milk
- 2 tablespoons butter
- 1/4 cup chopped parsley, for garnish (optional)
Directions
- Heat the oil in a large pot over medium heat. Add the onion, celery, and carrots, and cook for 5 minutes, stirring occasionally.
- Add the garlic powder, paprika, thyme, and pepper, and cook for 1 minute more.
- Add the chicken broth and cooked chicken, and bring to a boil. Reduce the heat and simmer for 10 minutes.
- In a separate bowl, whisk together the flour and milk. Slowly add the flour mixture to the pot and stir until thickened. Simmer for 5 minutes.
- Add the butter and stir until melted. Taste and adjust seasonings, if desired.
- Serve hot with chopped parsley, if desired.
