Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup all-purpose flour
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1/4 cup chopped parsley, for garnish (optional)

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion, celery, and carrots, and cook for 5 minutes, stirring occasionally.
  2. Add the garlic powder, paprika, thyme, and pepper, and cook for 1 minute more.
  3. Add the chicken broth and cooked chicken, and bring to a boil. Reduce the heat and simmer for 10 minutes.
  4. In a separate bowl, whisk together the flour and milk. Slowly add the flour mixture to the pot and stir until thickened. Simmer for 5 minutes.
  5. Add the butter and stir until melted. Taste and adjust seasonings, if desired.
  6. Serve hot with chopped parsley, if desired.
