1 lb. boneless skinless chicken breasts, cut into 1-inch cubes
1/4 cup olive oil
1/4 cup fresh lime juice
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups cooked white rice
1 mango, peeled and cubed
1 red bell pepper, diced
1/2 cucumber, diced
Fresh cilantro, for garnish
Directions
In a large bowl, combine the chicken, olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper. Mix until the chicken is evenly coated in the marinade.
Heat a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, for 7-8 minutes, or until the chicken is cooked through. Remove from heat.
Divide the cooked rice between four bowls. Top each bowl with the cooked chicken, mango, bell pepper, and cucumber. Garnish with cilantro.
Serve immediately, or store in the refrigerator for up to 4 days.
