Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 12-14 corn tortillas
- 1/2 cup shredded cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- For the red sauce:
- 1/2 cup tomato sauce
- 1/4 cup water
- 1/4 cup salsa
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp chili powder
- 1/4 tsp cumin
Directions
- Preheat the oven to 350°F.
- In a large skillet, cook the ground beef and onion until the beef is cooked through.
- Add the garlic powder, chili powder, cumin, salt, pepper, and cayenne pepper. Stir to combine.
- To make the red sauce, combine the tomato sauce, water, salsa, onion powder, garlic powder, chili powder, and cumin in a small saucepan. Simmer for 10 minutes.
- Fill each tortilla with some of the ground beef mixture and roll it up. Place the rolled tortillas in a 9x13 inch baking dish.
- Pour the red sauce over the enchiladas and sprinkle with the shredded cheese. Bake for 25 minutes.
- Serve the enchiladas with sour cream and salsa.
