Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 12-14 corn tortillas
  • 1/2 cup shredded cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • For the red sauce:
  • 1/2 cup tomato sauce
  • 1/4 cup water
  • 1/4 cup salsa
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp chili powder
  • 1/4 tsp cumin

Directions

  1. Preheat the oven to 350°F.
  2. In a large skillet, cook the ground beef and onion until the beef is cooked through.
  3. Add the garlic powder, chili powder, cumin, salt, pepper, and cayenne pepper. Stir to combine.
  4. To make the red sauce, combine the tomato sauce, water, salsa, onion powder, garlic powder, chili powder, and cumin in a small saucepan. Simmer for 10 minutes.
  5. Fill each tortilla with some of the ground beef mixture and roll it up. Place the rolled tortillas in a 9x13 inch baking dish.
  6. Pour the red sauce over the enchiladas and sprinkle with the shredded cheese. Bake for 25 minutes.
  7. Serve the enchiladas with sour cream and salsa.
