Ingredients
1 cup grated zucchini
1/4 cup olive oil
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup all-purpose flour
1 teaspoon baking powder
1/2 cup milk
Directions
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
In a large bowl, combine zucchini, olive oil, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
In a separate bowl, whisk together flour and baking powder. Add to the zucchini mixture and stir until combined.
Add the milk and stir until just combined. Do not overmix.
Divide the batter evenly among the muffin cups. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool for 10 minutes before serving.
