Ingredients

  • 3 egg whites
  • 3/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon almond extract
  • Pinch of salt

Directions

  1. Preheat oven to 250°F.
  2. In a large bowl, beat the egg whites until frothy.
  3. Add in the cream of tartar, salt, and almond extract and continue to beat until soft peaks form.
  4. Gradually add the sugar, about a tablespoon at a time, and beat until stiff peaks form.
  5. Drop the meringue mixture by the tablespoonful onto a parchment-lined baking sheet.
  6. Bake for 25-30 minutes, or until the meringues are crisp and lightly golden.
  7. Allow to cool on the baking sheet before transferring to a wire rack to cool completely.
