Ingredients

  • 2 whole wheat pita breads
  • 1/2 cup diced red onion
  • 1/2 cup diced red pepper
  • 1/2 cup diced zucchini
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/4 cup tahini

Directions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a medium bowl, combine the diced red onion, red pepper, and zucchini.
  3. Add the olive oil, and season with salt and pepper, to taste.
  4. Spread the vegetables onto a baking sheet, and roast in preheated oven for 8-10 minutes, until vegetables are tender.
  5. Meanwhile, warm the pita breads in the oven for 5 minutes.
  6. To assemble the pitas, place the roasted vegetables into each pita, and top with crumbled feta cheese.
  7. Drizzle with tahini and serve.
