Beat in the egg, then stir in the vanilla and pumpkin puree.
Combine the flour, baking soda, salt, cinnamon, and nutmeg; stir into the pumpkin mixture.
Drop by teaspoonfuls onto the prepared cookie sheets.
Bake for 15 to 18 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
