Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup hot sauce
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/4 cup ketchup

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the ground chicken, breadcrumbs, Parmesan cheese, hot sauce, parsley, garlic, oregano, thyme, pepper, and salt. In a separate bowl, beat the eggs. Add to the chicken mixture and mix well. Transfer the mixture to the prepared loaf pan.
  3. Bake for about 45 minutes, or until the internal temperature of the meatloaf reaches 165 degrees F (75 degrees C). Let cool for 10 minutes before serving.
  4. In a small bowl, mix together the ketchup and remaining hot sauce. Spread the mixture on top of the meatloaf. Return to the oven and bake for an additional 10 minutes.
  5. Let the meatloaf cool for a few minutes before slicing and serving.
