Ingredients
1 cup cooked and mashed beets
1 cup grated carrots
1 cup grated zucchini
1/2 cup chopped onion
1/2 cup vegan cheese of your choice
1/4 cup vegan butter
1/2 cup gluten-free flour
1/4 cup almond meal
1 teaspoon baking powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1/4 teaspoon smoked paprika
Directions
Preheat the oven to 350°F (180°C). Line a muffin pan with 12 paper liners.
In a large bowl, mix together the mashed beets, grated carrots, grated zucchini, chopped onion, vegan cheese, and vegan butter.
In a separate bowl, whisk together the gluten-free flour, almond meal, baking powder, garlic powder, salt, pepper, oregano, and smoked paprika.
Add the dry ingredients to the wet ingredients and mix until combined.
Divide the batter among the prepared muffin cups. Bake for 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Let the muffins cool for 5 minutes in the pan before transferring them to a wire rack to cool completely.
