Ingredients
- 2 lbs beef stew meat, cut into cubes
- 1 onion, diced
- 1 bell pepper, diced
- 1 jalapeno, diced
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 1 teaspoon oregano
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (14.5oz) can diced tomatoes, undrained
- 2 tablespoons tomato paste
- 1/2 cup beef broth
- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- 2 potatoes, diced
Directions
- Heat the olive oil in a large skillet over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes.
- Add the onion, bell pepper, jalapeno, and garlic to the skillet and cook until the vegetables are softened, about 5 minutes.
- Stir in the chili powder, cumin, oregano, smoked paprika, salt, and black pepper and cook for 1 minute.
- Add the diced tomatoes, tomato paste, beef broth, and cilantro. Reduce the heat to low and simmer for 15 minutes.
- Transfer the mixture to a slow cooker and add the diced potatoes. Cover and cook on low for 8 hours.
- Serve with warm tortillas and a side of beans and rice.
