Ingredients

  • 2 lbs beef stew meat, cut into cubes
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 jalapeno, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (14.5oz) can diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 1/2 cup beef broth
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 2 potatoes, diced

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes.
  2. Add the onion, bell pepper, jalapeno, and garlic to the skillet and cook until the vegetables are softened, about 5 minutes.
  3. Stir in the chili powder, cumin, oregano, smoked paprika, salt, and black pepper and cook for 1 minute.
  4. Add the diced tomatoes, tomato paste, beef broth, and cilantro. Reduce the heat to low and simmer for 15 minutes.
  5. Transfer the mixture to a slow cooker and add the diced potatoes. Cover and cook on low for 8 hours.
  6. Serve with warm tortillas and a side of beans and rice.
