Ingredients
2 lbs beef stew meat, cut into cubes
1 onion, diced
1 bell pepper, diced
1 jalapeno, diced
3 cloves garlic, minced

1 teaspoon salt

Directions
Heat the olive oil in a large skillet over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes.
Add the onion, bell pepper, jalapeno, and garlic to the skillet and cook until the vegetables are softened, about 5 minutes.
Stir in the chili powder, cumin, oregano, smoked paprika, salt, and black pepper and cook for 1 minute.
Add the diced tomatoes, tomato paste, beef broth, and cilantro. Reduce the heat to low and simmer for 15 minutes.
Transfer the mixture to a slow cooker and add the diced potatoes. Cover and cook on low for 8 hours.
Serve with warm tortillas and a side of beans and rice.
