Ingredients

  • 1 chicken, about 4 pounds
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • 1 cup Yorkshire pudding mix
  • 1/2 cup water

Directions

  1. Preheat oven to 375°F.
  2. Rinse the chicken and pat dry.
  3. In a small bowl, mix together olive oil, thyme, garlic powder, paprika, onion powder, oregano, salt, pepper, cumin, nutmeg, ginger, and cayenne pepper.
  4. Rub the mixture all over the chicken.
  5. In a medium bowl, mix together Yorkshire pudding mix and water until a thick paste forms.
  6. Spread the paste over the chicken.
  7. Place the chicken in a roasting pan and bake for 40 minutes, or until the internal temperature reaches 165°F.
  8. Remove from oven and let rest for 10 minutes before serving.
