Ingredients

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 teaspoon minced ginger
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon ground black pepper
  • 1 cup coconut milk
  • 1/2 cup water
  • 2 pounds salmon fillets, cut into 2-inch pieces
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup chopped green onions

Directions

  1. Turn on the Instant Pot and select the “saute” setting.
  2. Add the vegetable oil, garlic, onion, and ginger. Cook until fragrant, about 2 minutes.
  3. Add the fish sauce, brown sugar, and ground black pepper. Stir to combine.
  4. Pour in the coconut milk and water. Stir to combine.
  5. Add the salmon fillets to the pot and stir gently to combine. Close the lid and set the valve to “sealing”.
  6. Set the Instant Pot to “manual” and cook at high pressure for 5 minutes.
  7. When the cooking cycle is complete, quick-release the pressure and open the lid.
  8. Gently stir in the cilantro and green onions. Serve over hot steamed rice.
