Ingredients
- 1 pound spicy sausage, diced
- 1/2 cup onion, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup celery, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups long-grain white rice
- 1 (14.5-ounce) can diced tomatoes, with juice
- 3 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 pound medium shrimp, peeled and deveined
Directions
- In a large pot or Dutch oven, heat olive oil over medium-high heat.
- Add the sausage and cook until lightly browned, about 5 minutes.
- Add the onion, bell pepper, celery, and garlic and cook for an additional 5 minutes.
- Stir in the rice and cook for 1 minute.
- Add the tomatoes with juice, chicken broth, oregano, thyme, cayenne pepper, black pepper, and salt. Stir to combine.
- Bring to a boil, then reduce heat to low and simmer, covered, for 15 minutes.
- Stir in the shrimp and cook, covered, for an additional 10 minutes, or until the shrimp is cooked through.
