Ingredients

  • 1 pound spicy sausage, diced
  • 1/2 cup onion, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup celery, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups long-grain white rice
  • 1 (14.5-ounce) can diced tomatoes, with juice
  • 3 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 pound medium shrimp, peeled and deveined

Directions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat.
  2. Add the sausage and cook until lightly browned, about 5 minutes.
  3. Add the onion, bell pepper, celery, and garlic and cook for an additional 5 minutes.
  4. Stir in the rice and cook for 1 minute.
  5. Add the tomatoes with juice, chicken broth, oregano, thyme, cayenne pepper, black pepper, and salt. Stir to combine.
  6. Bring to a boil, then reduce heat to low and simmer, covered, for 15 minutes.
  7. Stir in the shrimp and cook, covered, for an additional 10 minutes, or until the shrimp is cooked through.
  8. Serve hot and enjoy!
