Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 2 bunches collard greens, stems removed and leaves chopped
  • 1/2 cup water

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the smoked paprika, oregano, salt, and red pepper flakes and stir to combine.
  3. Add the collard greens and water and bring to a boil. Reduce heat to low and simmer for 20 minutes, stirring occasionally.
  4. Serve warm.
