Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 3/4 teaspoon salt
  • 1/3 cup olive oil
  • 1/2 cup warm water
  • 4 cloves garlic, minced
  • 1/4 cup fresh rosemary, chopped
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Directions

  1. In a large bowl, combine the flour, sugar, yeast, and salt.
  2. Add the olive oil and warm water, stirring until the dough comes together.
  3. Turn the dough onto a lightly floured surface and knead for 5 minutes, or until the dough is smooth and elastic.
  4. Place the dough in an oiled bowl, cover with a damp cloth, and let rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat the oven to 375F.
  6. Roll out the dough into a rectangle about 1/4 inch thick.
  7. Sprinkle the garlic, rosemary, and cheeses over the dough and press down lightly.
  8. Cut the dough into strips about 1 inch wide and tie them into knots.
  9. Place the knots on a greased baking sheet and bake for 15-20 minutes, or until golden brown.
